The cuisine we create is based on the briny, earthy flavours we find in the vicinity around ‘De Kromme Watergang’. We do our very best to make light, creative dishes that are inspired by the beautiful landscape of Zeeland Flanders. The challenge we set for ourselves is to keep the route between the products we use (and their producers) and the kitchen as short as possible. Blanche’s father, Louis, ensures there is a daily supply of fish, crustaceans and shellfish. And for the last couple of years there has been a one-hectare garden situated very near the restaurant where we grow vegetables and fruit in cooperation with De Dethon and Wim Maes. Wim is an expert when it comes to growing special vegetables, fruit and herbs.
